Meet Dave Arnold and Nils Noren (right and left), respectively director of Culinary Technology and VP of Culinary and Pastry Arts at The French Culinary Institute.  One is a food techy with a healthy obsession with food clarification. The other one is a distinguished international chef who was cast on the first season of Top Chef Masters, the star chef spin-off of Bravo’s Top Chef (scheduled to air in June). What initially started out as a plain Q&A evolved into a fun session of story telling and joke sharing highlighted by unstoppable laughter. A $10 Pre-Opera Meal for Two

My husband and I won $25 tickets in the Metropolitan Opera’s weekly online drawing for orchestra seats to a Saturday night performance. The only issue: where could we eat a pre-opera meal in keeping with our thrifty seats?

The price tag wasn’t our only consideration. The weather was, too. It was sunny and in the ’70s- one of those perfect spring days to eat outdoors. Unfortunately, everyone else had the same idea, and I certainly didn’t want to miss the start of the opera because we had waited too long for an outdoor table. Let’s Talk Ratatouille

And I don’t mean the movie. My dad used to make ratatouille, and I loathed it with the searing passion that only an 8-year-old can muster. Well, how times have changed! The original “garbage bowl” dish, ratatouille can pretty much accommodate any vegetables you have lurking in your crisper drawer, as long as eggplant and tomatoes are included. It can also help to use up any leftover herbs you may have, which always happens to me. Does anyone need as much rosemary or thyme as you get at the grocery store? A Rioja Experience for Every Budget

Rioja shaped my wine palate. As a 20 year old living in Madrid, wines from La Rioja — the country’s Napa — and their smooth and drinkable bottles were readily and cheaply available. So, when a friend guided me to New York’s Rioja Restaurant Week from April 26-May 2, I got all geeky-excited about it. Yes, it might be a thinly — disguised marketing campaign, but it is still a great deal to be had.
