Buttermilk Ice Cream

A couple of months ago, I wrote about a common issue that many culinarians face: not knowing what to do with leftover buttermilk. Often, we home cooks purchase that sour dairy for a specific recipe, and rarely do we use the entire quart in which it comes; and, just as often, that buttermilk ends up with an ample mossy film after months of neglect on the shelves of our refrigerators.

Last week, as I conducted a little summer cleaning, I discovered half of a half-gallon of forgotten green market-purchased buttermilk and found myself wondering what the heck to do with it. Though the container was stamped with a date that had past weeks before I found it, the product was still good. So, I went into my living room and pulled out some of my favorite cook books and began researching recipes for something new and interesting to make. I came across biscuits, scones, cake, and fried chicken, but since it was over 90 degrees outside and surely over 100 degrees in my kitchen, there was absolutely no way I was going to turn on my oven or use the stove for a significant amount of time. Berry Oatmeal Muffins for Breakfast or Dessert

My husband picked up a rare treat one recent weekend: a carton of blueberries.

But he wasn’t about to use the whole stash for his fruit smoothie. I claimed a cup to make blueberry muffins.

Not just any ho-hum blueberry muffins, however. Berry Oatmeal Muffins.

Several years ago I cut the recipe out of a magazine — I can’t even remember which anymore — but I had never followed the exact recipe. Blueberries often are expensive, so I had always replaced them with the (free) red raspberries from my parents’ bushes. The results were delicious. Roasted Confetti Potatoes

When people ask me what type of eater I am, I generally respond that I’m carnivore. Meat has occupied the front seat in my diet since I don’t remember when. But lately, I’ve tried to cut back and eat more vegetables. Every time I read Rachel’s posts, I realize how little I eat veggies.

I went to Trader Joe’s the other day and picked up a bag of confetti potatoes. I’m ashamed to say this, but I had no idea what confetti potatoes were until I saw a bag of multi-colored potatoes.  They looked pretty so I went ahead and bought them. Chicken Mqualli with Preserved Lemons and Olives

Remember the preserved lemons I made back in July? Well, it’s been over a month and they are now ready to be used. And what’s a better way to use Moroccan goodies than in a Moroccan dish? It took me a while to find a good Moroccan cookbook. All the ones I found before were too westernized for my taste. So when I went to Morocco last summer, I made it my goal to find an authentic Moroccan cookbook.
